Role Overview
Behalf of a client a very dynamic new group in the Horeca industry we are seeking a commercially driven In-House Chief Accountant to manage financial operations, deliver real-time performance insights, and support strategic decision-making.
This role goes beyond accounting—acting as a finance business partner responsible for budgeting, forecasting, and profitability optimisation.
Key Responsibilities
1. Financial Operations & Ledger Management
• Maintain and reconcile general ledger accounts
• Ensure accurate posting of all financial transactions
• Perform daily/weekly reconciliations (cash, POS, bank)
• Cashflow analysis
• Manage accounts payable & receivable cycles
2. Payroll & HR Finance
• Export monthly payroll from Methodos software in line with Cyprus regulations
• Track labour costs, overtime, and departmental allocation
• Ensure compliance with social insurance, tax, and benefits
• Provide monthly payroll analysis vs budget
3. Weekly Financial Analytics
• Deliver weekly performance dashboards, including:
o Revenue by outlet (restaurant, beach, bar, events)
o COGS % and margin tracking
o Labour cost % vs revenue
o Spend per cover / guest behaviour
• Highlight variances and operational inefficiencies
• Support management with actionable insights
4. Monthly Reporting & P&L
• Prepare monthly Profit & Loss statements
• Conduct variance analysis vs budget and forecast
• Track EBITDA and key cost ratios
• Complete monthly closing within ≤5 working days
• Support audits and year-end reporting
5. Annual Budgeting & Forecasting (NEW – Strategic Responsibility)
• Lead the preparation of the annual operating budget, including:
o Revenue projections by outlet and seasonality
o Detailed cost structures (COGS, payroll, overheads)
o Capital expenditure (CapEx) planning
• Build rolling forecasts (monthly/quarterly) adjusting for:
o Seasonality (summer peak vs winter low)
o Event-driven revenue
o Market trends and demand shifts
• Work closely with operations to align:
o Staffing models
o Pricing strategy
o Procurement planning
• Deliver scenario modelling, including:
o Best / base / worst case
o Break-even analysis
o Sensitivity on labour and food cost inflation
• Present budget vs actual performance to management and investors
• Continuously refine forecasting accuracy and financial planning tools
This function positions the role as a Finance Controller-level contributor, not just accountant.
6. Controls & Compliance
• Implement and monitor internal controls supported by systems admin
• Ensure accurate VAT reporting and filings
• Liaise with auditors, banks, and external accountants
• Maintain full audit-ready documentation
7. Systems & Process Management
• Manage accounting & POS integration (e.g., Syrve, Xero, Oracle)
• Improve reporting automation and dashboards
• Support inventory and stock control processes
Candidate Profile
• Degree in Accounting / Finance
• 4–7+ years’ experience (hospitality strongly preferred)
• Proven experience in:
o Budgeting & forecasting
o P&L ownership
o Labour & COGS control
• Strong Excel / financial modelling capability
• Experience with POS-integrated accounting systems
• Commercial mindset with operational understanding

• Accuracy & timeliness of reporting
• Budget vs actual variance control
• Forecast accuracy (monthly & quarterly)
• Labour cost % and COGS optimisation
• Monthly closing timeline
• EBITDA performance vs plan.
